We wanted this year's Skift Global Forum speakers to reflect our expansion into the business of dining out. Today we're excited to welcome René Redzepi to our lineup.

As Skift expands into the business of restaurants, we closely follow those at the top of the industry creating change and advancing the craft and the business.

We are delighted to announce René Redzepi, founder and head chef of noma, as a speaker at this year’s Skift Global Forum. Redzepi is one of the best people in the world to discuss creativity, innovation and change, and the impact that food has on defining a community and destination.

Redzepi opened noma in 2003 and quickly established it as one of the best restaurants in the world — taking the number one spot on the World’s 50 Best Restaurants list four times in a five-year period.

In February, noma closed at the Copenhagen harborside warehouse it has called home for the past fourteen years. It will reopen at the end of the year in a new location with a new focus on the region’s three distinct seasons and the myriad micro-seasons within each of them.

In recent years, noma has undertaken international residencies in Tokyo (Japan), Sydney (Australia) and, most recently, Tulum (Mexico). These critically acclaimed pop-ups have brought noma staff, guests and media to new locations in search of inspiration and to learn about and experience the cultures and cuisines of the host cities and countries.

Beyond noma, Redzepi has been an early and frequent adopter of media and technology, using these platforms to share knowledge and inspire change.

He has helped establish Copenhagen as a culinary destination, welcoming chefs and cooks from around the world, many who have gone on to open their own restaurants in the Danish capital – together they have changed the scope of the city’s tourism landscape. In recent years, he has partnered with local and international chefs to open the critically acclaimed Hija de Sanchez with Rosio Sanchez, 108 with Kristian Baumann, and Barr with Thorsten Schmidt.

Redzepi is the founder of MAD, a not-for-profit organization that convenes a global cooking community with a social conscience, a sense of curiosity, and an appetite for change. Through a dynamic network, events, and media, MAD stimulates new conversations and perspectives, nurtures transformative ideas, and galvanizes resulting initiatives.

Redzepi has pushed the boundaries of the definition of a restaurant, and continues at the forefront of an evolving community and industry.
