American Airlines First-Class Flyers to be Served Italian Dishes from Texas Chef
It says something about airline fare that the chef indicated one of the big challenges in creating dishes for American Airlines first and business class was working with ingredients that aren’t fresh. How appetizing.

Chef Sergio Secchi, who makes his family’s Italian recipes every night at Ferrari’s Italian Villa in Grapevine, has crafted four new dishes that will be part of American Airlines’ in-flight menu for first class and business class travelers this fall.
“One of the guys that was running the food area at American did a cooking class with me and had a phenomenal time,” Secchi said, recalling that the concepts came over pasta and wine that night.
